Increasingly, scientists are realizing there is more to chicken egg white than meets the eye. As well as physically protecting the yolk and providing nutrients for the growing chicken embryo, there is growing evidence that chicken egg white contains a whole host of bioactive proteins that maintain the health and promote the growth of the embryo. Chicken egg white could therefore prove to be a useful source of therapeutic compounds.
