Abstract

Alcohol permeated the cultures and societies of the ancient Mediterranean. For at least eight millennia, people throughout Europe, North Africa, and the Middle East have developed, refined, mastered, and experimented with the production of alcohol; and the history is possibly even longer in Asia, as evidence has been found in China of wines that mixed grapes and rice.
