Links between nutrition, immunity and infection

Abstract

Since Ancient Greece, humanity has realized the power of nutrition in health. In this chapter, I describe the recent work on the interactions between nutrition, immunity and infection that allowed a better understanding of the astounding mechanisms through which nutrition modulates the immune system when fighting against virus, bacteria, fungi, and other parasite infections. I present the physiological and nutritional responses triggered by immune activation, and the current knowledge on the molecular pathways that generate these responses.
