This chapter focuses on the application of Interdigital sensors considering future technologies. The interdigital sensor is interdigital electrodes with a dielectric. The geometric and physical structures with different types of dielectric materials formed a variety of sensor and transducer designs. Its physical and chemical principles behind the operation vary so much in different fields of science and technology, generating varieties of applications in reality.
